Sun Dried Tomato Recipe
Ingredients:
vine tomatoes
olive oil
oregano sprig
seasoning
Method:
Turn the oven to 150c/300f/gas mark 2. Wipe the tomatoes over with kitchen towel.
Slice the tomatoes in half. You can core the tomatoes if you wish.
Place on a shallow baking tray with a brush of the olive oil and the sprig of fresh oregano. Season.
Bake on the top shelf of the oven for 3 hours, then transfer to the lower shelf for 1hour and 30mins, until the moisture in the tomatoes has mostly evaporated.
Pack into jars and fill with the olive oil. Delicious with salads.
Sun Dried Tomatoes are also a great flavour enhancer, added to meat dishes such as stews.
